I hope this leads to being able to have a Proton sheets or whatever name the Google sheets equivalent will be.

They haven't been making it super clear, but you can actually create, edit, and share text documents in Proton Drive right now! It's just not a separate thing like with Google.

"Sheets" refers to spreadsheets, not text documents.

Only in browser. It's not a properly functioning app.
