Quebec has a maple syrup reserve.

They take that shit seriously. They put that leaf on their flag for a fucking reason.

There is also a lot of organized crime in Canada centred around maple syrup. We essentially have a syrup mafia.

The maple leaf is on Canada's flag, not Quebec's, but Quebec produces the vast majority of maple syrup (about 70% of the world's production) and they need to make a reserve because some years are just disastrous and with climate change soon enough the industry will be kept alive artificially as the south of the province won't have the conditions to produce it anymore and the more Northern parts don't have the right kind of maple trees and it takes decades for them to be ready to extract their water...
