Microsoft Excel - I tried a lot of the FOSS office suites but I always come back mainly due to familiarity but also compatibility (which I know is not much of an issue lately).

Google Photos - I have Immich setup and use it but my wife and people around me use Photos and so I have to conform.

"Pixel OS" - I can't move to Graphene or similar due to banking apps.

Skype - Like Photos, due to relatives

You can move to grapheneos - all your banking apps should still work in Sandboxed Google Play without any fuss!

Nah. Skype is just still really good at braindead lets-go-chat nonsense. Even MS hasn't fucked it too badly.

Banking apps dont work on GrapheneOS?? I have one that needs Google services, but I guess sandboxed it would work

Then you should consider moving your money to a bank that takes security seriously, if possible.
