It’s a great feeling once you start your first print after assembly. You get that moment of wow I built something that is making something that could be used to make something else.
I have a MK3S+ and it’s great! I bought an MMUS2 but haven’t assembled it. Still playing around with a single colour or doing the swap mid print.
You are not missing features IMO, multicolor is still quite rare, its deffo not recommended for beginners and personally Im avoiding it because printing is already super slow.
Your limits are most likely max hotend temp and flow, also not having enclosure which is kinda necessary for some filaments. Stick with PLA until you are satisfied with quality

Ive heard good things about prusa. My first printer was an Ender 3 pro, and my god, I spent more time maintaining, fixing, and recalibrating it than it ever spent actually printing stuff.
Happy to read this. I also just ordered my first 3d printer (gift for my son) and settled on the Mini+ too because I want to have easy great results, not buying it to tinker.
