Which lemmy instance should I use if I want to see all of the posts?

All of them. Or just one of them as long as you can subscribe instantly to every community on every instance as it is created.

Lemmy is by its nature federated so any one server is not going to have everything. A server will start getting sent the content of every community you subscribe to though, and there are tools like browse.feddit.de to help you find communities.
