I want my phone to take a photo every 5 seconds after I tap "shoot" once. on MIUI I did it doing very long tap (longer tap more photos it would take).

I'm sure I did the same with my S21, but cannot find how to do this anymore.

Can anyone help me with this?

Or as a plan B: can you recommend a good (ideally free no ads, or inexpensive) camera app with this feature?

I don't think the S21 has that in the default app but I highly recommend Open Camera . You can have it take repeat photos with parameters you specify. Also open source ๐Ÿ˜

There is a samsung app called "Camera Assistant" it adds this (and some other features) to the camera. Up to 7 shots, but this is already something.

Thank you. OpenCamera is powerful, but UI is not human friendly at all :)
