This was it! Thank you! It looks like they made the contrast change much darker on the latest update. The change wasn't really noticeable before.

Any chance TrueTone or NightShift is enabled on one of your devices?
Both have TrueTone on and NightShift off. I'll check again later when I can get a hold of the 14 and play with the display settings again. To confirm, the color scheme change is the correct/expected state right?
