Es geht darum, dass die Daten nicht zu einer Person zugeordnet werden können. Dies geschieht einerseits durch aktiv angegebene Daten und das Verhalten als auch passives Tracking und cross referencing.
Wenn die Werbeunternehmen die Daten zu keinen bisherigen Identifikatoren (z.B. Google Ad ID) zuordnen können, dann profitiere ich beim Sparen ohne mich selbst (als identifizierte Person) zu verkaufen.
Mit CalyxOS und GrapheneOS musste ich mich aktiv entscheiden Google Dienste zu nutzen

If only one party uses those services one would have to trust Tuta/Proton to not save a copy of an incoming unencrypted mail. If a government wants access, they have to obey or shut down. Asking the unencrypted email provider from the other party is the obvious other way to access your data.
Only open source E2E for both parties is is trustworthy
