I remember a theory that prominent southern families lacked cooking skills and cooking traditions because it was a task done by slaves, and so post emancipation they could afford good ingredients but have terrible technique. But as wealthy white folk they maintained status and influence (and could afford more children)

Colonel Sanders' family was working class so they never had slaves, and so it was a groundbreaking innovation that a white man with white staff had food with herbs and spices in it.
