I've got a fair few, but I'm starting to get bored of them because most of them have a base of garlic, onion, and canned tomatoes.

That said, I just had chipotle shakshuka. It was pretty solid.

Spaghetti Aglio e Olio,its just pasta, oilive oil, and garlic, parsley if you got it. I live off of it.

step up from that is authentic Italian carbonara... Parmesan, garlic, egg yolk, pancetta, pasta. So simple.

honestly ive never had it! the american version just looks so awful. maybe ill make it at home, id have to omit the pancetta though. cacio e pepe is also a late night go-to but its much harder to make than it looks.
