You can access almost everything, but some instances are either defederated, or federation may be unreliable at times. You may also wish to create communities on another instance for whatever reason. For now, you're prolly fine and then you'll see.
In general no, you can see everything from one account. The reasons for having multiple accounts are approximately the same as for Reddit, such as having a NSFW account separate from your regular account. The only additional concern with Lemmy is that some instances defederate from each other. Unless your account is on the instance that's defederated though, it won't affect you.

I created one Lemmy account first, then a week later I discovered Kbin. Since there are currently some federation issues, I'm checking in on both accounts.
