My absolutely favorite cold beetroot soup for hot summer! Tried it in Lithuania on my vacation few years back and it was love at first sip. It is called Šaltibarščiai (sorry if I misspelled something I'm not Lithuanian:)). It's fantastic!

As a a died in the wool Lithuanian through band through it gave me a warm feeling seeing this on Lemmy as the Lithuanian subs are not yet populated so this has been a glaring hole in my feed.

For anyone interested there is a winter version simply called ‘Barščiai’ which is also amazing.

Skanaus!

Also big in Poland. The winter version is called “chłodnik litewski” — literally “lithuanian cooler”. And yeah it’s basically cold borszcz.

[–] AGodDamnGhost@lemmy.world 3 points 1 year ago

Ukraine too! My Ukrainian grandfather made it.

[–] fossilesque@mander.xyz 1 points 1 year ago

I was going to say, that looks like a crazy borszcz.

Konsume cool beet root soup in summer, enjoy side of potat. Awake in gulag, potat is lie, such is lyfe.

Im sure this tastes great, but my mind immediately thinks "pepto bismol soup"

[–] lagomorphlecture@lemmy.world 2 points 1 year ago

I'm sure it's great but the thumbnail made me think it would be some kind of creamy blueberry with egg lol

Always wondered about cold soups. I’ve only had had soups. This one looks almost like a desert due to color.

[–] innkeeper@lemmy.world 8 points 1 year ago (2 children)

It is made from kefir milk so it is really refreshing.

[–] Boiglenoight@lemmy.world 2 points 1 year ago (1 children)

I mean, when you mention milk. Cereal is a soup. 🤔

[–] innkeeper@lemmy.world 2 points 1 year ago

It's whatever you want it to be I guess. :)

[–] puppet@lemmy.world 2 points 1 year ago

I love kefir. I have to try this!

[–] goji@lemmy.ca 6 points 1 year ago (2 children)

I love a good gezpacho in the summer. Super refreshing

This one’s new to me and it sounds delicious. I love everything that’s in it. The colour is gonna be a challenge for westerners though… Pepto Bismol trauma giving me an unpleasant Pavolvian response to that shade of pink haha

Feel like it might be worth trying anyway

[–] innkeeper@lemmy.world 4 points 1 year ago

Let it sit in the fridge longer and it will turn almost purple. But I'm not that patient.

Almost, a little more savoury when done right.

[–] marigo@lemmy.world 9 points 1 year ago (2 children)

I love the colour. It looks like Dr. Seuss soup haha

[–] Draconic_NEO@lemmy.world 9 points 1 year ago (2 children)

The color kind of reminds me of Pepto-Bismol though I'm sure it doesn't taste like Pepto-Bismol.

[–] innkeeper@lemmy.world 5 points 1 year ago (2 children)

No idea what does Pepto-Bismol taste like, lol

[–] Bel_Shamharoth@lemmy.world 4 points 1 year ago* (last edited 1 year ago) (2 children)

It tastes like viscous chalky milk with a faint minty taste.

[–] innkeeper@lemmy.world 4 points 1 year ago (1 children)

That..sounds horrible. lol

[–] Draconic_NEO@lemmy.world 1 points 1 year ago

Indeed it is, whenever I take it the taste makes me want to vomit. It usually makes me feel better afterwards so in a way it's worth it (I only take it in the instance where I have a very bad stomach ace).

[–] innkeeper@lemmy.world 2 points 1 year ago

So why the pink color tho...

[–] gilarelli@jlai.lu 3 points 1 year ago

Taste like soup

[–] Etterra@lemmy.world 3 points 1 year ago

Yeah I have no idea what weird mystery soup that is so I'm gonna assume it is Pepto-Bismol.

[–] innkeeper@lemmy.world 4 points 1 year ago

Heh, yeah the color is great and it usually gets darker shade of pink after some time in fridge.

[–] Cris_Color@lemmy.world 9 points 1 year ago

Wow is that a pretty dish

[–] Natzore@lemmy.world 9 points 1 year ago (1 children)

That looks delicious AND pretty, would you mind sharing your recipe?

Thanks! I can find every ingredient easily at any grocery store here in Italy so I’ll give it a shot

[–] innkeeper@lemmy.world 3 points 1 year ago

Let us know how you like it!

[–] mytornadoisresting@lemmy.world 4 points 1 year ago (1 children)

I have beets, cukes and dill growing in the garden right now, so this is perfect timing! My beets are golden tho so it won’t be that beautiful color sadly. Now to figure out where to get kefir!

[–] innkeeper@lemmy.world 5 points 1 year ago* (last edited 1 year ago) (1 children)

Once I made it with buttermilk it was good too and I think I read some recipe where plain thinned yoghurt was used. Hope I did not offended fellow Lithuanians here with this recomendation hehe.

[–] mytornadoisresting@lemmy.world 1 points 1 year ago (1 children)

I meant to update you sooner, but I did make the soup and I easily found kefir at my Aldi! It was delicious. I’m making it again today which made me think to tell you about how much I love and crave this soup! Thanks!

[–] innkeeper@lemmy.world 2 points 1 year ago* (last edited 1 year ago)

Hi! Im glad you like it! Its funny because yesterday i harvested our beets for winter, spent whole day cooking and preserving them in jars and with leftovers i will make some soup today! Cant wait.

[–] Famko@lemmy.world 8 points 1 year ago (1 children)

Truly a great dish for hot summers (no lack of them here in Lithuania)! Also you spelt it šaltibarščiai fine

[–] innkeeper@lemmy.world 6 points 1 year ago

It is great! And thank you.I wasn't sure but since I'm from Czech rep. I had no problem to find šč on my keyboard at least.heh

[–] schizohybrid@vlemmy.net 5 points 1 year ago* (last edited 1 year ago) (1 children)

A refreshing summer staple, yours look delicious. Did you try žemaitiška šmakalas, cold kefir herring soup, while you were there?

[–] innkeeper@lemmy.world 5 points 1 year ago

Unfortunately not, but I will visit again and will try it. thanks for the tip!

[–] Aux@lemmy.world 3 points 1 year ago

We have the same in Latvia, amazing stuff and super easy to make!

[–] aeharding@lemmy.world 1 points 1 year ago
