I've given rdr2 two shots and I don't get it. I don't even hate the cut scenes that much, the gameplay just isn't fun.

One of my biggest gamer moments is that I could not get along with Red Dead Redemption to save my life, game was infuriating. Sludgy, heavy, deliberately delayed controls were already kind of annoying to me in GTA IV, I find Red Dead's eepy sleepy cowboi and his even eepier sleepier horse just piss me off. I dropped that shit.

It's got a great story. Which is why it's considered awesome.
However yeah... if you aren't doing the story missions the gamplay is way too much like some sort of boring simulator.
If you aren’t doing story missions you should be exploring the world which is pretty open with a lot of cool stuff in it. I don’t really know what people are doing if not that TBQFH
Story is good, the sandbox is great, the story missions are total ass
If I didn't finish it and connect to the story yeah I would look back on it as boring trash, but I ended up really liking arthur
