It's actually a whole album but every song is amazing. (instrumental prog rock, if that's your jam)
Edit: Fun fact, this dude is a solo artist, primarily guitar but he does all the production, mixing, sampling / synths etc. He also apparently refuses to do live shows, he's just a living room hobby artist, and is a full time airline pilot by trade.

This is a tough one, I'll go with L'appel du vide (Thomas Bergersen), but he has so many good ones that its very hard to figure which one is the best.
Laço Tayfa is/was (I have no idea tbh) a Turkish band whose music blends jazz fusion with Turkish folk music, it's absolutely fantastic. I linked their song Atmaca, which leans more on the Turkish folk side than the other stuff on that album.

Not sure what genre of metal to call this. Female vocalist, uses minimalism to make the parts that hit, hit.
