I heard a while ago that Amazon had such high turnover that it wouldn't be possible to hire more workers who hadn't previously quit or been fired. anyone know about that? Seems like they still don't care about running out of workers if they can afford nonsense like this.

Yeah I can't see how it's a sustainable model. If you live in the midwest where minimum wage is still $7.25 most people will eat the shit because it might be the only relatively decent paying job they can get, but anywhere with some kind of alternative has an average span of like 3 months, most people quit within the first month or two, with maybe 5-10% of people staying for over a year.
