I don't know about mustard, but tajin on watermelon is pretty damn delicious.

There's something weird going on with tajin. I like the basic idea of it, salt, chilli powder, some cayenne for heat, pepper, garlic, onion, maybe some lime/lemon. But there is something extra in tajin that doesn't mix well with my taste buds.
Could be brand based. Some have more loose plastic/arsenic/rat feces than others.
I love when my food has extra arsenic personally.

Watermelon has such a subtle taste that I'm pretty sure that you're not going to taste the watermelon over the mustard.

Well pickles and cucumbers are not the same. Pickles and mustard go very well together (see: Hotdog) I am talking about the classic, salad type cucumber

I don't think it's that far fetched. Pickled watermelon is delicious, melon with prosciutto is delicious. Sweet, salty, and vinegar are an age old combination.

It sounds weird, but I can imagine it working. Sometimes sweet fruit and mild salt can combine well. And mustard is kind of salt like.
